At the time of writing, the best map to find Mushrooms in Arc Raiders is Dam Battlegrounds. This map has several spots that you can explore for a bunch of potential Mushroom spawns, and while they aren’t the easiest to spot, you’re almost certain to grab at least a couple per run if you’re keeping an eye out for them.
